Four herbs for January:
- Rosemary is an excellent circulatory stimulant and can help warm your extremities and digestion.
- Dandelion root contains Vitamins A, B, C and D and is an excellent source of potassium (more than a banana). The root is great for improving digestion as it increases bile in the digestive system.
- Use any of the lemon-flavoured thymes during winter. You can either use twiggy sections of stems and leaves as a bed on which to cook and flavour roasted meat and vegetables or shred the leaves off the woody stems and add them to stews and soups.
- Curly or moss-curled parsley and flat-leaf parsley are good. If you want to use fresh, pick as you need it and snip it into omelette mixes, bread sauce and soups and casseroles. I like it as a breath freshener or for cleansing the palate.
